These corned beef egg rolls are super easy to make and they are only 2 Freestyle points each. That's my kind of recipe!
I love Boar's Head lunch meat. They don't use artificial colors or flavors, or fillers and by-products. This is not a paid post! It truly is my favorite lunch meat and the only one I buy.
One of my favorite lunch meats is their cracked pepper smoked turkey. It's 0 points and tastes great. If I'm looking for a quick lunch it is my go-to meal.
For this recipe I bought Boar's Head corned beef. I bought a pound, but only used 8 ounces. The rest can be used for sandwiches. I used a food scale to weigh the corned beef, then I chopped it up.
I used 1 cup of sauerkraut. I put it in a strainer and rinsed it before I added it to the corned beef. That way it's not as strong.
I mixed it together and my filling was ready to go. Now it was time to add the filling to the egg roll wrappers.
If you haven't used egg roll wrappers before, they are super easy to work with.
First, you lay out the egg roll wrapper.
Next, you add the corned beef mixture. I used about 1/3 cup for each egg roll. I was able to make 8.
Then I folded up the bottom part of the egg roll.
Next I folded in the sides.
After that I started to roll it up.
I dabbed my finger in a bowl of water and got the outer part of the triangle wet and sealed it. I put the egg roll on a baking sheet seam side down.
Once I had all 8 egg rolls made I sprayed them with no stick cooking spray and put them in the oven.
I let them bake for 8 minutes, then I turned them over and put them back in the oven for 5-7 minutes. Once they were golden brown I took them out.
I served these corned beef egg rolls with fat-free thousand island dressing. It was 2 points for 2 tablespoons.
I love how easy this recipe is to throw together. And you only need 3 things to make them!
Yield: 8 servings (2 points per serving for blue, green and purple)

- 8 oz. Boar's Head Corned Beef
- 1 cup sauerkraut, drained and rinsed
- 8 egg roll wrappers

Preheat oven to 400 degrees F.

Chop the corned beef, then add it to a mixing bowl.

Add the sauerkraut to the mixing bowl and stir together with the corned beef.

Spray a baking sheet with no-stick cooking spray.

Lay out one egg roll wrapper and add 1/3 cup of the filling.

Roll up the egg roll wrapper starting by folding up the bottom, the sides, then rolling up from the bottom. Dab your finger in water and get the top of the egg roll rapper wet, then seal it. Add the egg roll to the baking sheet.

Repeat until all of the egg rolls are made.

Spray the top of the egg rolls with no-stick cooking spray.

Bake for 8 minutes. Take the egg rolls out and flip them. Continue baking 5-7 minutes or until golden brown.
